Yummy Summer Mocktails For Your Delight | Herbal Goodness

Summer isn't summer without enjoying iced, umbrella-tipped drinks under the cool shade with friends or family or both. What better way to achieve this than with yummy summer Mocktails that are infused with the health benefits of fruit as well as Herbal Goodness' Vitamin B12 fortifications.

Here are four mocktail recipes to try out this summer. I hope you find your new favorite warm-weather delight.

Grapefruit Kombucha Agua Fresca¹

It’s not every day you find a drink that’s good for you and that you want to drink on the regular. This one has fresh grapefruit juice and kombucha, along with a subtle herbal note thanks to the rosemary and Herbal Goodness vitamin B12 methyl extract liquid. Tangy-sweet and lightly herbaceous. This is one for grapefruit lovers!

Serves: 2 servings

Ingredients

  • 1 cup 100% grapefruit juice
  • 1 cup unflavored kombucha, like GT's trilogy
  • 1 teaspoon maple syrup + more to taste
  • 2 sprigs of fresh rosemary
  • Herbal Goodness vitamin B12 methyl extract liquid
  • optional: pure sparkling water

Instructions

  1. In a pitcher or 2 cups measure, combine the grapefruit juice, kombucha, and maple syrup.
  2. Stir to combine. 
  3. Fill two glasses with ice and pour the drink over top. 
  4. If your kombucha isn't naturally effervescent, top each glass off with a little sparkling water. 
  5. Rub each sprig of rosemary between your hands to help release the oils on the leaves. Pop a sprig in each glass. 
  6. Add a few drops of Herbal Goodness vitaminB12 extract for extra nutrient fortification as well as added vitality
  7. Adjust sweetness, to taste. Enjoy!

Peach Iced Tea²

Beat the heat on summer days with a refreshing glass of peach iced tea. Sure to be a hit with the whole family, you could also make it with raspberries.

Ingredients

  • 200g granulated sugar
  • 5 ripe peaches, 4 stoned and chopped, 1 sliced to serve
  • 4 teabags

Instructions

  1. Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
  2. Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
  3. Put the teabags in a large heatproof jug and pour over 2 liters of boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
  4. Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water, or ice. Add peach slices to serve.

Goji berry & raspberry cooler³

Serve up this fruity mocktail on lazy summer days when you crave a refreshing drink. It's flavored with goji berries, raspberries, ginger, and honey

Ingredients

  • 40g goji berries
  • 150g frozen raspberries
  • 1 thumb-sized piece of ginger , peeled and finely grated
  • 2 tsp honey, or to taste
  • crushed ice, to serve
  • small handful each of fresh raspberries and mint, to serve

Instructions

  1. Tip the goji berries, raspberries, and ginger into a large jug. Pour over 850ml boiling water and leave to cool. 
  2. Transfer to the fridge to infuse for at least 2 hrs, or overnight.
  3. Strain through a sieve into a clean jug, then sweeten with the honey. Fill four glasses with the ice, pour over the drink and garnish with the fresh berries and mint, if you like.

Blood Orange and Ginger Soda³

Mint is decidedly one of the most refreshing flavors, especially when paired with ginger and blood oranges. This non-alcoholic beverage delivers a delightfully pungent, spicy kick with every sip.

Ingredients 

  • 1 cup water
  • ½ cup sugar
  • ⅓ cup sliced peeled fresh ginger
  • 18 fresh mint leaves
  • 6 (2-inch) blood orange rind strips
  • 3 cups blood orange juice
  • 3 cups club soda
  • 6 blood orange wedges
  • 6 mint sprigs

Instructions

  1. Combine the first 3 ingredients in a saucepan over high heat. Bring to a boil, stirring until sugar dissolves. Remove from heat; let stand for 15 minutes. Strain; discard solids.
  2. To prepare each cocktail, muddle 3 mint leaves and 1 rind strip in a cocktail shaker using the handle of a wooden spoon. Add 2 1/2 tablespoons ginger syrup and 1/2 cup orange juice to the shaker; shake well. Pour the mixture into an ice-filled glass. Top with 1/2 cup soda; stir. Garnish with an orange wedge and a mint sprig.
